Later, 2012! The time to toast to a Happy New Year will soon be here! While we at Food Republic looove our bubbly, sometimes we like to skip our usual champagne and forget auld acquaintance with the Italian sparkling wine known as prosecco. Here’s why it’s a good – no, make that a great – idea:
Sparkling wine is essentially just regular, still wine that is fermented with yeast to give it an effervescent texture. Prosecco; however, is special: Rather than being fermented in the bottle, it is fermented in stainless steel tanks before being transferred to the bottle. Fancy!
As with other wines, prosecco bottles can be a little difficult to decipher if you don’t know what you’re looking for. Here are some helpful words you’ll want to add to your lexicon when selecting a bottle:
NOTE: With any bottle of prosecco, serve chilled and keep cool on ice.
Just as with champagne, prosecco makes a great sparkling cocktail! Try serving this delicious concoction when the clock strikes midnight or the next time you invite everyone over for Sunday brunch:
Pour prosecco and spirits into 4 champagne flutes or coupes. Add one scoop of sorbet into each flute. Serve immediately.
