The countdown to Thanksgiving 2012 continues! Today, we’re sharing a recipe using another one of my favorite holiday ingredients: cranberries. As we mentioned in our Fall farmer’s market report, grab a couple fresh bags at your local market and use them to whip up a delicious sauce – like mine below! –  and your turkey day guests will be begging for more!

Finish the sauce:

Dissolve the gelatin in 1 cup boiling water. Add in reserved cranberry base and simmer on low heat until both the gelatin and the base have dissolved, whisking intermittently.

 

 

 

Meanwhile, pulse fresh pineapple in a blender until pureed and reserve, with juice. Remove sauce from heat and add pineapple while mixture is warm. Add in walnuts and stir before cooling in decorative glass serving dish. Chill and garnish with a handful of fresh cranberries. Serve cold.

Cranberries are my favorite for the holiday will be trying this one for sure!!
